However all you Star Wars fans may celebrate May the Fourth, it’s always better with food…especially chocolate!
For a decade now, I’ve been baking up these choco-beasts I call Wookie Cookies. Unless you’re a sarlacc, I guarantee it won’t take you 1000 years to gobble them all up.
These fudgy treats have a fuzzball coconut top, a battle-hardened exterior, and (if not overbaked in your oven…or by a Death Star super-laser) a very Chewie center.
So, here we go with the INGREDIENT LIST (makes 2 dozen large cookies):
- 2 sticks butter (softened)
- 1½ cups dark brown sugar
- 2 eggs
- 4 tsp vanilla
- 2½ cups flour
- 1 cup finely chopped oatmeal
- ½ cup cocoa
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1 cup sweetened flake coconut
- 1 cup chopped walnuts or pecans
- 1 cup chocolate chips
- Extra flake coconut for topping
HOW TO PREPARE WOOKIE COOKIES:
- Preheat oven to 400 degrees Fahrenheit (Fandom note: it’s easy to remember the correct temperature, because the average Wookie lifespan is 400 years)
- Cream butter in mixer. Beat in sugar until light and fluffy. Add eggs and vanilla.
- In separate bowl, combine flour, chopped oatmeal, cocoa, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to mixer until blended.
- Add flake coconut, then chopped nuts, then chocolate chips (any variety).
- Refrigerate dough for 10-15 minutes to promote thicker cookies.
- Place large balls of dough (~1 ½ inches) onto baking sheets lined with parchment paper. Flatten with back of spoon to ~½ inch thick. Sprinkle tops with extra flake coconut and press with spoon into the dough.
- Bake cookies in center of oven until lightly toasted on top and just set on the bottom, approximately 9-10 minutes.
- Cool ~5 minutes on baking sheet and then transfer to cooling rack.
- Enjoy with blue milk after firing bowcaster at Stormtroopers and ripping arms off droids…
